Egg Wow Muffins

What You Need

1 ½ cups biscuit mix

½ stick butter, melted

1/4 cup milk

4 Jimmy Dean Fully Cooked Original Sausage Patties, chopped into small pieces

1 cup shredded cheddar cheese

½ cup shredded cheese, your choice (pepper jack, parmesan, or Colby are all yummy!)

6 eggs, whisked in a separate bowl with 2 tablespoons milk

1/2 teaspoon each garlic salt and seasoned salt


What You Do

  1. This recipe makes 1 dozen regular-size savory pastries perfect for brunch or easy lunch with fruit salad or yogurt parfait. 

  2. Line the muffin tin with parchment cupcake liners.

  3. Set all the ingredients out. Let eggs come to nearly room temperature while you put together the biscuit bottom.

  4. To make the biscuit bottom, chop the sausage patties into small pieces and place them in a mixing bowl with the biscuit mix, shredded cheeses, melted butter, and 1/4 cup milk. Stir this together with a fork. This mixture should be pasty with just a few dry clumps.

  5. Use a small spoon or scooper to fill the bottom of each muffin cup with the biscuit mix. Press down flat. When you have filled the bottoms of all 12 cups, you should have a little of the biscuit mix left to pinch onto the top after adding the egg mixture.

  6. Whisk together 6 large eggs with 2 tablespoons milk and 1/2 teaspoon each of garlic salt and seasoned salt in a large glass measuring cup.

  7. Pour about a tablespoon of egg mixture on top of the biscuit bottom in each muffin cup. Divvy up all of the egg as evenly as you can.

  8. Drop little pinches of the biscuit mixture you have left on top of the egg. If you don’t have any biscuit mixture left, you could sprinkle a little more cheese on top.

  9. Bake the pastries at 360 F degrees for 15 minutes until lightly browned on top. Serve immediately. Refrigerate leftovers.
