Strawberry Smack Popcorn

What You Need
One 8-9 ounce bag butter-flavor puff corn
1 cup sugar
1/2 cup light corn syrup
2 tablespoons butter (1/4 stick)
2 tablespoons strawberry gelatin dessert powder
What You Do
Pour the popcorn into a large glass mixing bowl. Line a cookie sheet with parchment paper.
In a saucepan, whisk together sugar, corn syrup, and butter over medium heat until butter is melted and sugar dissolves. As soon as this mixture comes to a boil, remove the pan from the burner.
Whisk the strawberry gelatin powder into the butter and sugar syrup for about a minute.
Drizzle this syrup over the popcorn. Mix gently with a wooden spoon until the puff corn is well-coated.
Pour the coated popcorn onto the pan lined with parchment paper.
Bake the coated popcorn for 48 minutes at 250 degrees. Stir every 12 minutes. When done, the popcorn should not be soggy.
Let the popcorn cool completely.
When the popcorn is completely cool, break it up and package it in cello bags.
Because of the high sugar content in this snack, packaging it in small baggies as a snack mix with pretzels, miniature vanilla sandwich cookies, peanuts, pecans, and cashews is a fun way to try it without overdoing the sweets.
